like the another company 737 you can type thesettings in rather than clicking each letter

It is already there. Just click on the small circle on the top left of the 2D CDU panel (see image below).

Nice to know about that. It will be very useful for all of us. Sometimes typing long routes waypoints and coordinates, using FMC keys, is an annoying hard work.

Can the keyboard-for-FMC mode toggle be mapped to a keystroke, like with the another company 737NGX?

It is. To switch it ON/OFF:

To activate CDU keyboard control press Ctrl+Shift+K
To deactivate CDU keyboard control press `
