To get a cold and dark cockpit, start with the default Cessna 172 and shutoff all the engines, lights, batteries, avionics, and magnetos. Then load the CS 757.

I use the PSS 757 fuel planner program.  You will have to do some searching to find it, I don't recall where I got it.

Don't turn off the master avionics switch in the default Cessna.  Not all planes are equipped with this button, and you may find it difficult to fly the planes without avionics.

Until you find a fuel planner, once you load up the CS757 and your route, look at your Navlog.  It will show you the estimated burn.  Add 5000 lbs for minimum fuel and 10,000 for contingencies and you ought to be good.
