Long Range Cruise performance charts show the max EPR settings and the fuel flow in pounds per hour for the FL chosen. I only have charts for the -200 with -9 engines.

You r experience ; 30000Ft  EPR 180 setting what will be an avaerage fuel/PH each engine.

At 150K lbs your looking at about 3000-3100lbs per hr per engine at M.79.

Good rule of thumb...
10,000# per hour for the 727 normal burn.

So plan to land with about 8,000 to 9,000# if the weather is good.
If the weather is IFR, use fuel to the most distant alternate + 45 minutes.

Example: JFK to STL around 1+45 minutes = 18,000# + 45 minutes = 27,000#
If alternate required add fuel to most distant alternate (sometimes you could have more than one alternate).

We had very fancy charts to figure the burns at various altitudes and speeds, but most pilots were comfortable using the 10k / per hour.

Those were the good old days Lou when airlines let you fly fast. Most companies don't let you fly faster that M.76 these days.  Cry
