Hmm... I have a throttle axis for this, so I didn't.  Does it do that in-flight too?

Yes, you can't grab it at anytime.  I don't know why not.

I also noticed that on a flight some time ago.
Didn't pay much attention to it since I also have lever for it, or otherwise a knob on my stick.

I have it reassigned on my keyboard (Shift+') and my buttom 8 on my MSFF2 joystick, and it works, I wonder though could the speedbrakes be ARMED on the 727, so they deploy automatically on touch down?

The -100 series speed brakes have no auto deployment. The -200 series does. I did fly a 727-200 without the auto speed brakes. Maybe some early 200's were made without auto speed brakes. We had some weird planes in our fleet. We has an X TWA plane that had the overhead and FE panel switches reversed. The FE panel UP was Off and down was ON. The overhead was F]foward wasoFF and backward was ON. TWA was the only company that ordered them that way. It really sucked.
