I've been meaning to ask about this. What is it for? I haven't found any information or seen any pictures of 757 cockpit that has this? Was it something only the early 757's had?

Its probably just an old fashioned timer.  Some cockpits have it on the clock, others on the yoke.   This one happens to be on the overhead.  The fact that its found on the overhead makes little sense to me, since its design is purely for navigation, and flight logging

I think it has something to do with fuel transfer.

I was out at the training center yesterday and went in the real 757 simulator. No timer on the OVHD panel. It's a good idea though when the Captain is checking for "light leaks".  Wink

The dial on the overhead, is to turn the rear cabin attendant (male or female, Marie) down from fat/useless to slim/petite - very useful if you've got a tendancy to tail-strike on rotation... seems obvious to me!!!

How about Fuel time or another way to time the outbound leg in a holding pattern to issue a 1 min leg inbound to the fix Cheesy

It is used to help to calculate distance... some charts are meant for certain specific procedures which sometimes restricts a speed for a maneuver... for instance flying at 200kt from A to B will take about 2 min.. that's when the kitchen thing is useful...  Even the Saitek Pro flight yoke has a Digital Kitchen Clock...
