When pressing on flaps control to increase flaps position from 0, flaps speed in the indicator is normal, takes a few seconds to go from 0 to 1.

If, during this time, you use the flaps increment controls once again, the indicator jumps really quickly to 1 and then to 5 not respecting any timings. I couldn't see this behaviour from 5 to 15, to 20 etc, only from 0 to 1 then 5 if you act on the controls quickly.

Right, because you forced the indicator to skip the SLATS extension indication and start indication of the FLAPS extension, which has a priority.

From the Manual:
1. Flap Lever
UP - the slats and flaps are retracted.
1 – the slats extend to the midrange position the flaps remain retracted
5, 15, and 20 -
the slats remain in the midrange position
the flaps extend to the commanded position

3. Flap Position Indicator
- Between UP and 1 - the slats are between the retracted and midrange
position.
- 1 to 30 – the flaps are in the indicated position
