What is the max Tow, Zfw, Law and max fuel capacity for the B757 III 200 and 300 models??????.
Can not find them anywhere in the documents!!

They are in the "aircraft" file which is inside each aircraft folders!

Hard to say, IRL you could have 2 airframe with identical physical structure yet different MTOW/MLW/MZFW listed on AFM, only because you pay different to Boeing....
