is there a way to disable pause at top of descent? I have no use for that feature since im there to fly the entire flight. :(

It's in the FMC under MENU> OPTIONS

Yeah, it's not easy to find, but it's definitely in the manual. Specifically, the ‘757 Captain III’ Manual Part II – Aircraft Systems (CS757CAPTAINIII_MANUAL_PART2.pdf), on page 407

To turn it On or Off:

Open the CDU > MENU > OPTIONS/SETUP > OPTIONS > PAUSE AT TOP OF DESCENT

When I try to turn off TOD in options it WILL NOT except the change

Don't forget to hit the execute button once you have made your selection.
