My method is guessing too. I always add about 10,000 more than what I think I need (unless there is no more room for fuel), and so far I have always landed with between 10,000 - 15,000 pounds remaining (unless I am going the maximum range, when I usually have between 5,000 and 10,000 pounds remaining). I have only had to do in-flight refuelling a couple of times since getting the the CS737-100/200, and that was back in the beginning. ;)
