The screen capture above, a few posts ago, is pretty much what I've used for most of the planes.
I find the shock absorption way too soft in the default so I crank it to max, or near max.

Most of the settings are really to ones personal liking.

In the real 757 for example, you don't really hear the tire squeal that much in the cockpit, whereas in the 727 you could really hear the nose wheel - and smell it as well - on landing.

As for the flight dynamics of the CS planes I find them pretty good for a "game" simulator. Even the multi-million dollar 6 axis flight simulators that I flew were not "just" like the real plane. It is impossible to recreate all the subtle movement of the plane and the little clues that the pilot gets from them.

As for hand flying and shooting touch and go landings the CS planes in FSX are very good to show energy management and how a large sink rate will develop on final if you get too slow and behind the power curve. Depending on your control settings, the the roll rate and other controls tend to be very light even with a force feed back stick. As an example, the 707 was fairly slow in roll compared to the 727. I think the 707 is a bit too slick in drag and takes much longer than the real 707 to bleed off the airspeed when you close the throttles in level flight. The CS 727 does a good job in replicating the high sink rate of the small winged bird. The 727 was very fast in roll compared to the 707 and I find the 757 to fly very nice indeed - as long as you remember - it's a game.
