I understand that it is 'no big deal >:(', I myself have tried to land with winds that strong and it was quite challenging :o

I'm only trying to offer possible solutions to you  ;)

At this point I can not think of anything else to suggest to you other than to possibly un-install and then reinstall the aircraft.
I have never experience the banking left or right after an autopilot disconnect that you are describing:(
