First problem I see there are duplicate lines entered in your panel.cfg in the [VCockpit01] section:

gauge35=Captain_Sim.p727.sound!main, 0,0, 10,10, Captain_Sim\727\sound.ini

AND

gauge48=Captain_Sim.p727.sound!main, 0,0, 10,10, Captain_Sim\727\sound.ini


Remove gauge48=Captain_Sim.p727.sound!main, 0,0, 10,10, Captain_Sim\727\sound.ini

and re-number the V-One gauge lines:
gauge48=dsd_fsx_xml_sound!Sound,2,2,2,2,\panel\v-one\v-one_Sound.ini
gauge49=dsd_fsx_xml_sound!Debugger, 420,550,600,80


Next, I believe you had everything correctly installed except the sound files.

The task bar item 'dsd_fsx_xml_sound.gau' is the error generated when it can't find the sound files and makes the 'ding-dong' sounds you hear. It makes a sound for each file it can not find.
Make certain you have the V-One gauge sound files in one of the following directories:

For Window 7 (64 bit):
C:\Program Files (x86)\Microsoft Games\Microsoft Flight Simulator X\Sound\V-One

For Window 7 (32 bit) and Windows XP:
C:\Program Files\Microsoft Games\Microsoft Flight Simulator X\Sound\V-One
