I have also done it for the 757. As it is with the 767 mod, it is for the 757, the mod is named Captain_Sim.b757.oh.MOD.CAB and here is the link:

As for the 727, I've never done it because mine already shows the fuel weight in pounds and not Kilos.

By the way. In answer too the question do all the 767s display in KGS? I think the answer is yes. This is what lead to the problem of a lack of fuel being added to the Gimli Glider's fuel tanks.
