Although MarkOz simplified it for you, here it is anyways. Yes, you turn teh autopilto onw, with heading hold. It will track the heading you put into the bug....and for altitude you hit altitude hold at your desired alt, or the ATC's requested alt. Or you can trim it up to make it easier hwen changing altitudes often... ;D
