Fuel management in the 727

FUELING
1. Fill ALL tanks equally until wings are full (automatic shutoff.)
2. Remaining fuel goes in center tank.

FUEL USAGE
- Fuel in center tank more than wings:
1. Start engines, Taxi & Takeoff - ALL boost pumps ON, all X-FEEDS open.
(The center fuel boost pumps create a higher pressure than the wing boost pumps (4 vs 2 + slightly larger) so fuel will burn from center tank)
2. Before 3,000 pounds are burned, start a cross feed from center tank to ALL engines. This is for CG & structural reasons.
       Ignition ON
       All boost pumps ON
       All X-FEEDS open
Turn off boost pumps in tank #1 while watching engine instruments
When engine stabilized, Turn off boost pumps in tank #3.
When engine stabilized - ignition OFF
       Monitor fuel burn
When fuel in center tank equals wing tanks:
       ALL boost pumps on
       Close #1 & #3 X-FEED valves

Note: Boeing planes ONLY cross feed fuel to engines, you cannot transfer fuel from tank to tank. So if you have an engine failure of engine 1 or 3 you will have to cross feed fuel from the wing tank of the dead engine every once in a while to keep the wings within balance. Same if engine 2 were to fail, you would have to cross feed out of the center tank periodically to keep the tanks even.

During fuel dump the same is true. You must dump just like the normal fuel use procedure. If the fuel in center tank is greater than the wings you must dump from the center tank first, until equal, then you can dump from all three tanks. You will still have to monitor fuel balance as fuel will dump faster from the center tank than the wing tanks.
