The idea is to use the Center Tank until it is equal to the Left and Right fuel tanks, and then to use all the tanks from that point on.
On the fuel panel are three Fuel Crossfeed Manifold Valve Switches, turn the Left and Right ones ON (in the horizontal). Turn OFF the FWD and AFT Fuel Boost Pumps for the Left and Right fuel tanks. See upper part of the image.
Once the Center Tank is about the same amount of fuel as the Left and Right Tanks, turn ON the FWD and AFT Fuel Boost Pumps for the Left and Right fuel tanks and then turn of the Left and Right Fuel Crossfeed Manifold Valve Switches. See the lower part of image.
