Hi David.

Ascent and descent is by using the Pitch Trim wheels, that's what I call them (2) in the attached image.
Heading hold is using the Heading Hold switch (4) with the Mode Selector (5) on VOR. Turn Heading hold off and it should track the radial to the VOR (not tied this yet).
To follow a default FS Flight Planner plan, switch the Mode Selector switch to TACAN. I have to fiddle with this a bit sometimes because the A/P goes haywire. I end up turning the A/P on and off a few times (this causes the Autopilot Disengaged light to come on and I can't turn it off whilst in flight).

I'm still working my way through this a bit at the moment. So that's the best I can do.
