Can't remember hearing it too, but there's a cutout lever, so it should be there.

According to a 727 pilot's review of the Captain Sim 727 for FSX, these are missing features.  I don't know if they were options or available equipment from the start though, but considering that the CS 727 has a stall test and a gear cutout horn, it should at least have those systems functioning.  The takeoff warning alarm would be nice to have too.
