As far as I know, once you engage the TOGA switches or the EPR button, the throttles go to full. I'm not sure if pressing CTRL+SHIFT+G does the same as I've never used it in the 757 (I usually just click on one of the TOGA switches on the throttle levers). I'll have to test the keyboard shortcut, but I expect that if it works, the results will be the same. :(

Not that I know of. I don't use FSUIPC to it's full potential, I bought it so I could set up the throttle range, so that when my throttle is fully forward, I get 100, and when fully closed it's 0 (cockpit tooltips) and for a few other extra things it does. Other than that, I don't use FSUIPC for anything else. :-/
