You must have a problem with your 727 Paul. The DH adjustment knob works fine on mine (for both the Pilot and Co-Pilot sides).
The only problem I have is that if you adjust one, it changes both, and there is a difference in their settings. If I set the Pilot's radar altimeter to 200 feet, the Co-Pilot's radar altimeter shows 300 feet (see next pic). If I change the Pilot's to 400 feet, then the Co-Pilot's reads about 900 feet!
