I think you can be safe to just use the tutorials of the one that is already out there and just let CS concentrate on putting his first rate standard of quality into the sim.
I expect this 767-300 will be beyond anything we have been accustomed to for FSX.  
You can go to http://www.flyaoamedia.com/ pick up this DVD and learn anything you ever wanted to know about the 767.  It will all apply to Captain Sim's. ;)
