Okay. I finally found out how to fix this (for PC). The key assigned to turn on  the Avionics Master Switch is the Page Up key. I don't remember setting this key to that, but at least I have it there. Pressing the Page Up key turned my Avionics On, so now the MFD and Autopilot are visible.

To find this setting, I went to Controls > Keyboard > then searched for Avionics and came up with that result. For Xbox, you probably need to search for Avionics and set a button for it (set it temporarily I guess then reset the said button to its former setting (I'm not a Console player so I can't help much on)).
