For route planning with the 707 (if I want to do VOR to VOR), I usually go to vataware.com, search my route under "Top Routes" and find a route with a lot of VOR's in it. If I can't find one like that, I adapt the route to include more VOR's. (And I use the Aivlasoft EFB program for route planning, by the way.) However, I usually use Doppler navigation (very easy to use--good for a beginner) or the INS (very complex, but fun and accurate).

As for VOR tutorials, I first learned VOR Navigation through the default lesson in FSX (one of the pilot lessons with the real-world pilot). Just be sure to read the entire text of the lesson before flying it, though.
