The two are  very different.

With the 707, you have to fly it more (be at the controls most of the time). There is no A/T so I spend fair amount of time making adjustments to the throttles. I have to land the plane (A/P helps, but I have to do the work).

767 is almost a case of "set and forget".

I get more satisfaction from the 707 because I am the one who makes the flight a success. Or not! ;) It is not fully automated.
