Is there a way to determine what type of engines are installed on a CS 707? For example: JT3D-7 or JT4A-11?

As far as I can tell, no specific engine has been comprehensively modeled, but I would think they probably had a JT3D-3 in mind.

My guess is that they modeled the PW JT3D-7.

According to Wikipedia -PW JT3D-7: 19,000 lbf (84.4 kN)

From the aircarft.cfg -

static_thrust=18963.000 almost 19,000 lbf

Mark, I like your approach matching static thrust to the JT3D-7.

Another question, does the CS 707 use old or new engine cowlings?
