Set the passengers and cargo for the passenger aircraft, then save, then start FSX. You should be set to fly at the settings you just did. You'll probably see an extra 510lbs of weight in FSX, it's the crew. ACE seems to be missing the extra crews weight.

You can use ACE while in FSX but the plane has to be reloaded to have the changes show.
