You noticed it correct. Compared to default FSX planes that virtually hit a brick wall when spoilers are deployed 100%, CS planes do not do that. If I plan and program my flight accurately before take off which includes the destination runway and proper TD, I can land the bird with no issues using some spoilers. I closely follow instructions on FMC when spoilers are needed.
Now, as far as which is accurate in terms of real 757's, only a certified pilot can tell. IMHO, as far as accuracy is concerned I am more inclined to go the route of CS than stock aircraft.
