I have both the 757 & 767. I have found that the 767 is a bigger resource hog than the 757.

But...That said. I mostly fly the 767. For me the 767 only had a few minor flaws that were fixed by the "fixes" that other members came up with (thank you so much guys ;D). I love doing the transpacific flights in the -200 although I have flown some other long flights in the -300 too. Of the Captain Sim planes, I have to admit that the 767 is my favourite. I guess I'm lucky because I have a good enough computer to cope with it.
