I was having the same probs with violent rocking (at random) and found a slight alteration to 1 line in the aircraft.cfg has virtually eliminated the problem for me.  
I backed up a copy of the cfg before altering, then I reduced the number in the AP_Roll_controlstep line (red) the lower the number the more stable she becomes.  I don't know how this impacts on other aspects of the 757 but it works for me.
