I was wondering how do I start the 727 with a cold and dark cockpit.

With version 2.2, there's a flight included with C and D. I'd just go to that flight, then move the airplane where you want it and set that as the default flight- that should keep it in Cold- and dark. or, just turn off all the switches, I guess...

where do I have to go to find this flight I've found it in the captain sim folder but I can't find it in fsx.

On the main menu, click, "Load'.

The name of the flight is, Boeing 727-100 Cold-N-Dark at KSEA, I think.
