Have the same problem.  In addition, using a normal 757 TO CG setting with the appropriate trim, on TO with hands off, the aircraft rotates before VR and gently sets itself into a climb {almost like an auto-TO}. Very nice but not what real aircraft do. The only way I can achieve a TO where I have to physically rotate at the correct speed is to set the trim at 3.25 or less - and then TO with a Stabilizer warning on the ECAM. Notice that the stab trim meter disagrees when you do mouse over right in the trim... as for my experience the correct valor is the one you get after set the mouse over stab trim meter... and a 45% CG will give you 1.00 Stab Trim.... This will make your airplane take off by itself right at VR... for that reason i always set one digit less... as for instance if FMC tells me i should set 2.00 i will set 1.00.
