It is used to help to calculate distance... some charts are meant for certain specific procedures which sometimes restricts a speed for a maneuver... for instance flying at 200kt from A to B will take about 2 min.. that's when the kitchen thing is useful... Even the Saitek Pro flight yoke has a Digital Kitchen Clock...
