You would need to mess around with the CSWeapon.xml to get the correct angle/direction of fire. BUT. They will be a fixed angle/direction, you can't have them moving.
It is described like this in the CSWeapon.xml file:

In the above station, the guns are angle up at about 3.9 degrees. It gets confusing that a negative number is up, but messing around with them, you will get more familiar with the way they are.
This one is from my A2A WOP3 Spitfire mod:

As you can see, I reduced the angle to 1.7 degrees, so they were lining up the gunsight.

In multiplayer with both players having Weapon for FSX? Possibly (but you can't shoot others players down). I have no idea how well it would record in FS Recorder, but you might be able to shoot the another aircraft down.
