I often modify the CSWeapon.xml to give me unlimited ammo and also have unlimited fuel selected in FSX, so I don't have to keep reloading the aircraft to get rearmed or having to land at an airport to refuel.

I have added Weapon to a lot of different aircraft (including the default C172 and J3 Cub) just for the fun of it. The J3 Cub is hopeless as a fighter (no surprise there).
